chocolate walnut muffin

i love sundays.

for me its a day where i can eat my cereal and watch cartoons in the morning, spend my afternoon grocery shopping and reading a book at night.

i like my sundays to be as laidback as possible.

another thing that i love to do on sundays as well, is bake! there's just something so therapeutic about baking to me. and of course, who doesnt love the smell of freshly baked muffins right?

so let me share with you the recipe of this lovely chocolate muffin i made!

Ingredients (serves 12)

200g self raising flour
180g caster sugar
1/4tsp salt
50g cocoa powder
100g melted butter
50ml milk
1/2tsp vanilla essence
2 eggs
1 tsp baking powder
100g walnuts
100g white chocolate chips
2tbsp icing sugar



Directions

1. preheat oven to 180degrees
2. sieve flour, baking powder and cocoa powder into a bowl
3. add salt and sugar and mix evenly
4. add milk, butter, vanilla essence and eggs. whisk till it becomes a smooth batter.
5. once muffin batter is done. make sure there's no lumps. crush half of your walnuts and add in to the batter. also add in 3/4 of your white chocolate chips. mix everything nicely together
6. pour the mixture into the muffin cups so that it fills about 2/3 full.
7. decorate the top of the batter with walnuts and white chocolate chips.

8. bake the muffins at 180degrees for 25-30mins

9. at around 25mins, you should see the muffins have already risen. open the oven and insert a satay stick into the muffin, if it comes out clean, it means your muffin is done!
10. remove the muffin from the oven and let it cool for like 10mins. then, sieve some icing sugar over it.

goes extremely yummy with a pot a earl grey tea and a nice movie!

i recommend The Proposal. i've watched it and i give it 3.5stars! its mostly funny than romantic to me but its a great movie to catch. it stars sandra bullocks and ryan reynolds and i think its still showing in the cinema! click on the ad to see the trailer yeah!
